I bet there is not one of you out there that has heard of this renowned International holiday. Well there is very good reason for that.....I made it up! Today is actually my mother's birthday (Everyone say Happy Birthday to Mom!). Her favorite cake in the world (I am trying to keep this travel related in any way I can) is Fruit Cocktail Cake and we try to make sure she has it for her birthday every year. So, today while baking this annually honored cake, I thought it might be a great idea to share it with you all. Some of you have probably heard of it or have made some rendition of it in your lifetime, but here is our version. I hope it becomes a part of your family like it did mine.
Fruit Cocktail Cake
1-1/2 cups sugar
2 eggs
1/2 cup veg oil
2 cups flour
1/2 teaspoon salt
2 teaspoons baking soda
15 oz. can fruit cocktail and juice
Beat together cake ingredients, then add fruit cocktail and juice. Mix well. Bake in 13 x 9 greased and floured pan at 350 degrees for 40 - 60 minutes. (40 is usually enough for me - I am at 1100 ft and use a dark glass pan). Spread (pour) topping (see below) on hot cake.
Cake Topping
1-1/2 sticks of butter
1-1/8 cup sugar
3/4 cup evaporated milk
Cook 3 minutes (boil), then add:
1-1/2 teaspoons vanilla
3/4 cup of chopped nuts
3/4 cup shredded coconut
This actually sounds quite delightful! I haven't had fruit cocktail in years, but I used to love it. I am going to have to give this recipe a try. Thanks so much for sharing!
